This Chocolate Bark is a perfect way to kick off the new year! It’s the perfect dessert and afternoon pick-me-up. These bad boys are jam-packed with lots of delicious toppings. There are so many ways you can customize it to the way you love it.

I don’t usually set a new year resolution. Part of it is because I rarely remember to check what they are and keep myself accountable.

But in this new year, I want to create more easy No Bake desserts and snacks for those of you who may have a busy schedule.

I know when I was working my 9 – 5 corporate jobs, it was hard to find the energy or time to create snacks for my sweet tooth.

No Bake Vegan Chocolate Bark

This Chocolate Bark is one of the easiest No Bake treats I have ever made.

There is no baking required for this vegan treat!

All you need to do is to melt a few dark chocolate bars and top it with some delicious toppings. Then freeze it to harden.

Voila! These little powerhouses are packed with goji berries, nuts seeds and coconut flakes. It’s crunchy, and so delicious. The perfect snack for your whole family to enjoy.

Ingredients for this Chocolate Bark

For this chocolate bark recipe, I used hu kitchen dark chocolate. Their chocolate is gluten-free and vegan! I topped it with some raw nuts, dried goji berry, and hemp seeds.

You can add any of your favorite toppings, chia seeds, flax seeds, freeze-dried strawberries, and more.

Growing up in China, my mom would always add goji berries to tea or soup.

Peppermint Chocolate Bark

There is always room for more desserts around the holidays and this is the perfect way to bring a treat to the Christmas party.

To make this vegan chocolate bark into a holiday dessert, simply add some crushed up candy canes to the melted chocolate and you are good to go!

Feel free to be super creative with the toppings! You can use any nuts, seeds, and berries as you prefer.

Ingredients

  • 3 Bars chocolate, of your choice
  • 1/4 cup goji berries
  • 1/2 cup blueberries
  • 1/4 cup pistachios
  • 2 tbsp shaved coconut

Instructions

  • Break up the chocolate bars into a microwave-safe bowl and microwave on medium heat until completely melted. Stir occasionally to prevent the chocolate from burning.

  • Line a sheet pan with parchment paper or a cookie sheet.

  • Pour the chocolate on top of the pan and spread it to the preferred thickness. Let the chocolate set for a little bit.

  • Spread all the toppings across the chocolate.

  • Freeze the chocolate bark for 30 minutes.

  • Take it out from the freezer, break it into pieces, and ENJOY!

Notes

  1. If you dig the bitterness of chocolate and sugar-free treats, you can choose to use 100% dark chocolate. The berries and goji on top will add a little sweetness to it still.
  2. Feel free to be super creative with the toppings. Everything goes with chocolate
